Mini Banana Oat Pancakes

Ingredients
  

  • 1 Banana
  • 1/2 cup rolled oats
  • 1/4 cup milk (dairy or non-dairy)
  • 1 egg
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract (optional)
  • 1/4 teaspoon cinnamon (optional)
  • 1 teaspoon honey or maple syrup (optional)
  • A pinch of salt (optional)
  • Cooking oil or butter for greasing

Instructions
 

Blend the Batter:

  • In a blender or food processor, add the banana, oats, milk, egg, baking powder, vanilla extract, cinnamon, and salt.
  • Blend until smooth. Let it sit for a minute to thicken.

Heat the Pan:

  • Heat a non-stick pan or skillet over medium heat.
  • Lightly grease with a small amount of butter or oil.

Cook the Pancakes:

  • Pour small spoonfuls of batter onto the pan to make mini pancakes.
  • Cook for 1-2 minutes, until bubbles form on the surface.
  • Flip and cook for another 30 seconds to 1 minute, until golden brown.

Serve & Enjoy:

  • Serve warm with fresh fruit, Greek yogurt, honey, or nuts, chocolate chips or blueberries
