Mini Banana Oat Pancakes

Ingredients
- 1 Banana
- 1/2 cup rolled oats
- 1/4 cup milk (dairy or non-dairy)
- 1 egg
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla extract (optional)
- 1/4 teaspoon cinnamon (optional)
- 1 teaspoon honey or maple syrup (optional)
- A pinch of salt (optional)
- Cooking oil or butter for greasing
Instructions
Blend the Batter:
- In a blender or food processor, add the banana, oats, milk, egg, baking powder, vanilla extract, cinnamon, and salt.
- Blend until smooth. Let it sit for a minute to thicken.
